Lentil Sloppy Joes
I was craving this classic comfort food! I grew up calling them taverns. What about you? Yum Yums, spoonburgers?
I would use green or brown lentils instead of red lentils. Red lentils tend to get mushy very quickly.
Serve these with whole grain buns, open-faced on toast, in a lettuce wrap, or even on sweet potato wedges! Hope you enjoy them as much as I do. These sloppy joes have no saturated fat, but instead provide a great source of fiber and protein. Make a batch and enjoy the leftovers or take them to work.
Lentil Sloppy Joes
Make this classic family recipe plant powered with lentils in less than 30 minutes!
Ingredients
- 1 cup green or brown lentils uncooked
- 1/2 medium onion yellow or red
- 2 cloves garlic
- 1/2-1 green bell pepper
- 1 15 oz tomato sauce
- 1-2 Tbsp sweetener (maple syrup or brown sugar) or other sweetener of choice
- 1-2 Tbsp vegan Worcestershire sauce optional or use apple cider vinegar
- 1-2 tsp chili powder optional
- 1 tsp cumin, paprika, optional
- 1 package buns or bread for open faced prefer whole wheat or make lettuce wraps
- pickles or other favorite condiments
Instructions
- Cook the lentils according to package directions. Usually 15 min or less. I test their texture when they are close to done cooking. Drain them.
- Saute onion, bell pepper and garlic (use 1-2 Tbsp of water or a tsp or oil).
- Add the tomato sauce, spices, and sweetener. Stir to combine and until heated through.
- Add the cooked lentils and mix.
- Serve with your favorite condiments.
