Loaded Apple Nachos

I recently did an after school program called Kitchen Club with a group of students. Of course, it is my desire to encourage the kids to eat more plants. This is a very versitile recipe. You can modify it to include your favorite toppings. Have fun. This is perfect to make with kids, grandkids or kids at heart. 🙂

I recently purchased an air popper for my family. I actually used it for the first time making the popcorn for this and took it to Kitchen Club. I’m in love with my air popper. I did use some Purple Popcorn from Kroger/Pick N Save. I think it is perfect plain and perfect for something like this.

Ingredients
  

  • 1 apple A Granny Smith is perfect, but any variety is fine
  • 1 cup popcorn popped, plain is fine
  • 1 tbsp almond butter or other nut butter or for more indulgent dessert use caramel sauce. A sauce could be made using dates as a sweetener too.
  • 1 tbsp cocoa nibs or mini chocolate chips
  • 1 tbsp Craisins or raisins. Buy the lower sugar Craisins or unsweetened.
  • 1 tbsp coconut, shredded and unsweetened optional

Instructions
 

  • Core the apple if you can. Slice the apple as thin as possible. I have a gadget that slices and cores apples (and even peels them if desired) all at once. See notes below.
  • Spread out the slices on a plate. If you do not want your apple getting brown, squeeze on a little lemon juice, or dip into orange juice.
  • Drizzle on the nut butter. Top with other toppings.

Notes

Other topping ideas:
  • Drizzle with a plant based yogurt or a little honey
  • Sprinkle on granola
  • Pomagranate Arils
  • Chopped Nuts
  • Crushed Pretzels
